From today, hunters are allowed to sell wild boar and wild boar meat to private individuals. The hunter needs to undergo training via the County Administrative Board and be registered in the wild boar hunter register.
Besides the training, there is also a limit of ten unskinned wild boars and meat from ten wild boars per year.
The training also includes analyzing the meat to ensure it does not contain trichinae.
Trichinae are small parasitic worms. They spread when animals or humans eat meat that contains living trichina larvae. Infection in humans is very rare, but can cause serious illness and in rare cases lead to death.
Trichinae die at around 60-65 degrees in the oven and at 70°C when grilling.
Most trichinae die when you freeze the meat. However, there are strains that can survive freezing, so it is not a safe method to avoid infection.
