Ekstedt's kitchen is built around fire. The restaurant says its tools are a fire pit, a wood-fired oven and a wood stove. Birchwood, natural heat, soot, ash, smoke and flame shape the cooking, according to the restaurant.
Visit Stockholm describes the kitchen as using original methods over an open flame. The restaurant says it uses ancient Scandinavian cooking techniques to make contemporary food with carefully selected seasonal ingredients and Swedish flavors. Fire is both the cooking method and, in the restaurant's words, the heart of its culinary philosophy.
Chef Niklas Ekstedt's website traces that approach to his childhood in Buenos Aires, where he says he grew up in a family rooted in cooking with fire. His father taught him asado, the site says. Visit Stockholm describes the room as warm, welcoming and rustic, with natural materials. Its listing says Ekstedt received its first Michelin star in 2013.
