Prices have risen, producers are struggling to deliver and stores have been forced to import cucumbers to meet the demand.
In addition to the warm summer weather – which leads to increased demand and reduced production – one reason for the craving for the vegetable is believed to be a cucumber salad that has spread on the platform Tiktok.
According to the newspaper Stavanger Aftenbladet, the trend can be traced to the Canadian influencer Logan Moffitt, who has made himself known on Tiktok for his various cucumber recipes – which have then been picked up and spread further by Norwegian food influencers.
