The 29-year-old chose to withdraw hours before Wednesday's competition.
"She woke up this morning and felt a little unwell. She's not that sick, but in an Olympic year she doesn't want to risk anything," coach Per Nilsson told Expressen.
Hennig-Dotzler was in 16th place in the overall standings of the Tour after the first two stages. At the 2022 Beijing Olympics, she won gold in the sprint relay and took silver in the relay with the German team.
