"Dubai chocolate" is a chocolate cake filled with pistachio cream and kadayif – a type of thread-like dough used for pastries.

The chocolate was launched in 2022 by Fix dessert chocolatier in Dubai. A video on Tiktok – with 230 million views – made the combination a global sensation. There are several "Dubai chocolates" on the market – often at a juicy price.

Giles Hacking, nut dealer at CG Hacking, tells Financial Times that pistachio kernels cost around 16 kronor per hectolitre a year ago – now the price is around 21 kronor per hectolitre.

The pistachio world is basically depleted for the time being, he says.

At the same time, chocolate manufacturers report that they cannot produce enough of the popular chocolate.

The pistachio stocks were already scarce after last year's poor harvest in the USA – which is the largest exporter of the nut. On top of that, the price of cocoa almost tripled last year, due to poor harvests.
