The bar owners are accused of, among other things, manslaughter and endangering the public, the prosecution announced on Saturday, according to local media.
One of the owners said the day before that all safety regulations had been followed.
"We are doing everything in our power to investigate the cause of the fire," he told the website 20 Minutes.
On Saturday, the police also announced that the first victims of the fire disaster have been identified. They are four young people between the ages of 16 and 21.
The deceased who have now been identified are all Swiss: two 16-year-olds, a boy and a girl, a 21-year-old woman and an 18-year-old man. The remains have been handed over to their relatives, the police said, according to public service broadcaster SRF.
On Friday, the Italian Golf Federation announced that 16-year-old Italian golf talent Emanuele Galeppini died in the fire. However, his body has not yet been officially identified.
At least 40 people died in the explosive fire during New Year's celebrations in Crans-Montana. In addition to those killed, 119 people were injured, many of them seriously. More than 50 of them are being treated in hospitals outside Switzerland, including in France, Italy and Belgium.
The identification of the dead is said to take days or even weeks. Several foreign nationals are believed to be among the victims, but not all of the injured have been identified.
